That short, square, piece of speedo cable will break because the angle drive jams up. It shouldn't matter which way it is wound until the angle drive puts so much of a load on it that it unwinds. Funny that it will unwind before damaging the plastic drive cap. In any case if the square cable does unwind the fault is NOT with that piece of cable but the angle drive or the lower speedometer cable (or maybe a piece loose in the speedometer head?). Having the RPM-MPH conversion chart is a good idea. I leave mine just laying on the binnicle so it is handy if I need it.
