In response to the problem you mention with the clock being reset whenever 
you reconnect the battery:

You can get fused battery isolation connectors.  These come with a key to 
pull out to isolate the battery, but there is a low-rated bypass fuse.  This 
provides sufficient current to keep the clock memory and the courtesy lights 
working, but will blow if a larger load is applied (such as anyone trying 
the starter motor).  The bypass fuse may also be sufficient to support the 
alarm - you may have to uprate it slightly, but it'd still blow if anyone 
tried the starter.

These are a relatively common way of immobilising cars and farm equipment 
where a continuous supply is requiired for keeping the clock, onboard 
computers, radio station presets etc. all in memory.

I believe classic car suppliers such as Frost carry them...
