Ian, I think low humidity is much more important than a warm temperature. I have a de-humidifier permanently on in my modern garage. As does my business partner, who has a large collection of monkey bikes and cars ( including a 1919 Rolls Royce Silver Ghost and a 1930 RR 20/25) along with rag top Merc. XJS, etc. The stone walls will probably be your biggest challenge. I would first set about the floor, vapour barrier, insulation and a good modern concrete. Then I would go for trying to block up as many draughts as possible and install roof insulation. You could always fasten some thick polyethylene above head height, even take it down the walls and stick in a de-humidifier with its water piped plumbed outside. Basically a very large, walk in car-coon. I once bought ( and subsequently restored) an Austin A40 Sports which had lived for years in a stone barn, complete with earth floor. It was the most rotten car you ever hope (not) to find. I ended up buying another car simply to use its less rotten chassis, never again! My new garage / study will be very well insulated, possibly under floor heated and certainly air tight and de-humidified. Just my view, I'm sure other folk will have other takes.
