Hi James,
I recently had my dash, binnacle, knee pad, and top of the centre console retrimmed.  I used a chap called Nick Fulcher based in Hethersett which is just down the road from me and I could not believe it when he worked on the prototype DeLorean in Detroit!  Check out the following link:  www.coachtrimmer.co.uk/ourwork.html
Anyway, the results were fantastic!  I did as much as could by picking out the damaged material (think I had the worst sun damaged binnacle ever!!!!) and filling the cracks with body filler and sanding it down (saved me a few pounds too!!)
I did not opt for a leather dash but the material used had a very thin foam backing and with a firm hand went back in no probs. I had a pain with the air vents though by the windscreen.  From my experience I found it easier to screw them loosely in before putting the dash back in.
Hope this helps, you shouldn't have any trouble.
BTW I also need a glove box insert, so if anyone else has another one kicking about please let me know.
