Dave,
I'd say you'd be better off replacing at least the balls, assuming both the
races and bearing cage are in good shape. But as you say, the races appear
abnormal, so you might be better of just replacing the entire joint. I
rebuilt my CV joints last year and here's a picture of the balls after
cleaning.

They had a mirror finish and absolutely no pitting or corrosion.
On another note, I bet you're having fun elbow deep in grease! That must
have been the messiest job I've done on the car :)
