[DML] Stainless steel panels

I have looked into the history of my car and found out that the
original owner
side swiped the passenger side door (backing out of garage hit the
radial arm saw). My question is since I want to remove all paint and
bring up to specs: how are panels repaired? I have seen sheet metal
workers cut out bad section with die grinder and weld in patch and then
regrain on counter tops in kitchens. Is this the method that is
approved? Or do we repair in another way.
