Sheared studs: Drill 'em out.
Loose rivnut: You can buy rivnuts and a rivnut tool. Martin has more
detailed info. You can install a new rivnut or just epoxy it in place
as per your original plan.
Impact foam: Some sort of heatshrink or spray-on vinyl...maybe do-it-
yourself pick-up truck bed lining would work?
I've never removed any body panels...sorry mate.
