When you go to evacuate the air out of the system, you
should let the vacuum pump run for an hour or so..
During that hour, apply some heat to the dryer.  Bring
the temperature up a few degrees, not enough to melt
anything!  This will help boil any moisture out of
it... 

You say "seems really dry"?  How would you know?  If
it has been exposed to the atmosphere, then it has
moisture in it...  When you buy a new one, it should
be under vacuum.  Generally, you break the seal on it
and install it quickly then put it back under vacuum
so it does not absorb any moisture.

There is no way I know of to "test" it for moisture.
I just always assume if it is not new and sealed
(under vacuum), it has moisture.

The heat method is not to say that it will work for
you, but if you are going to re-use the old dryer it
will improve your odds.  It is a gamble you may loose.
