Hi Welmoed. I applaud your efforts, and feel it's overdue for the car. My car has 16" wheels in front, and 17" wheels in back, though mine are maybe a bit wider than what you might be considering. Like you say, there was no trouble at all finding tire manufacturers who made 16" and 17" tires that were compatible with the stock Delorean diameters. Because my tires are a bit wider than stock, I did have a clearance issue in back, which I corrected by raising the back a bit more than is customary. The ride quality with 16" and 17" wheels and correspondingly shorter sidewalls is what I consider harsh, or intimate, depending on whether you don't like, or do like to feel the bumps. Personally, I don't like it, but I drive like a weeny little pansy. On long rides, feeling every little bump is tiring. If I ran over a quarter, I would probably feel it, no kidding. The traction budget and "feel" are outstanding though. As you have stated, the shorter sidewalls give the driver better feedback about how the car is handling. My tires are 225-40-R16 in front, 275-40-R17 in back. About the appearance. The stock sidewall height seems a little old-fashioned to younger people with more modern standards, so bigger rims and skinny tire sidewalls help broaden the appeal of the car to the next generation of caretakers. Taste is subjective, but 16" and 17" inch wheels just plain look better to me than stock. I'm looking forward to seeing your wheels at DCS08.
