Mark - For attachment of the SS body panels, strength really isn't the major consideration. These aren't structural panels by any means. I would use a decent grade stainless bolt (316 CRES or 304 CRES) because the main problem that I have seen with these bolts is that they get rusted in place, and get broken or stripped during removal. Remember to use anti-seize / anti-corrosion compound when installing any bolts.
