Joshua, The symptoms you are describing is what is known as clutch "chatter", this sound indicates any of the following: Disc face oil or grease soaked. Disc, pressure plate, and or flywheel face burned, scored, and or warped. Although there are other causes of your symptoms the most common in the DeLorean is above. A leaking rear seal will cause oil to leak into the bell housing and deposited onto the clutch component surfaces named above. If your DeLorean has more than 60k miles on the clutch you should have it replaced. Be sure to have the flywheel inspected and re surfaced if necessary and replace the rear crankshaft lip seal.
