Those links are primarily to keep the sheet metal parts from building up a static charge. Disconnected, there's a slight chance that you'll notice more incidence of getting static shocks when you touch the car after being driven, and slightly more incidence of radio interference (mostly on AM). My guess is that you wouldn't miss them. They are not used to carry any real ground current (e.g. lighting systems).
