Not all temp gauges are created equally and not all senders are either.
With one of our senders and one of our rad fan switches, the fans should
cut in a gnat's wing above the 220 mark - but again, not all the gauges
are the same but it's good enough to tell you when things are getting
hotter than they should.

I've seen an original sender (in my car) read over a lower and lower
range to the point where the fans would cut in at the first mark. I've
seen a replacement sender (that bore a remarkable similarity to ours in
appearance) send the needle off the gauge before the engine was even
warm to the touch!

FWIW the rad fan switch we do is set to the operating temperature of the
Renault 30. Can't really go wrong with that, IMO.
