Congratulations on your new purchase !!! Invest in fun instead of the stockmarket...
Check the sender unit by connecting a meter between the sender unit connection and the engine block. This is a resistive component and will vary with temperature.
If you get an open circuit (i.e. no reading on your meter) then the sender unit needs replacing. If there is a resistence, check it both hot and cold to see if it is different (Magnitude of 10 is about right assuming it is not logarithmic).
If this proves OK then measure for a resistance at the plug where it connects to the back of the dial in the dashboard (disconnect the dial first). If this reads open circuit then the problem is with the wiring.
Check continuity (i.e. 0 to 0.5 ohms) from the connector to the sender unit to the connector plug where it pplugs into the dial. If you get continuity then there is an earth missing ! On a traditional car you would just bold this to the car body but you'd have to check for an alternative earth point. I would have to check the manual but the dial gauge may have source voltage to it.
If this proves OK then the gauge may be suspect.
Do you have a copy of the Delorean Workshop Manual and wiring diagrams?
I could copy one for you and post it to you if you haven't.

Richard Hillman in Lichfield on Sunday.
It needs a little help and TLC though; I need some advice on a couple

First is that the temperature gauge does not work at all, not even a
flicker. I have tried shorting the plug that connects to the sender
that is on the engine but has no effect at all. I have looked at the
circuit diagram for the PRV ( as per Volvo Haynes manual ) engine and
it shows only one lead going to the sender not the two that the De
has. Does anyone have any suggestions or a circuit diagram, or the
voltages on the leads?
Second what is the alternative part no or source of the bush that is
on the bottom of the steering column as it goes through the floor.
The steering wheel currently shakes like mad and the base moves about
one quarter on an inch in every direction!!!
