Check the metal pipes that run to the radiator are getting hot - and whan the fans cut in, the air blown should be smeggin' hot, if you know what I mean. 

Can you see the water pumping from the return hose back into the coolant bottle? Check this from COLD. It may be your water pump that's failed, or if you see lots of bubbles, it could be the cylinder head gaskets. It doesn't take long, even with the self-bleed kit, to get an air-lock in the water pump at which point the temp will rise very fast and the rad will cool down equally fast.

I can help with sourcing a water pump, radiator and if the worst comes to the worst, a head gasket job. I also have a place who will recondition/test/fix radiators who did a great job on my project car's rad. Dave and I are taking on DeLorean work now and will be tackling Steve Strelczak's head gaskets next week. Grab me or Dave on Sunday if you want a chat
