If the striping is still there you are probably OK, if gone and hitting the rivets you should change it. It's one of those "how soon do you want to drop the trans again?" questions.
But to actually answer your question, the installed thickness across both facings is about 8mm. Each side is 3.5 mm and about .5 mm for the steel disc.
If a new one is thicker you may have issues completely disengaging the clutch unless you cut less of a step in the flywheel or the pressure plate is designed to accomdate something thicker. It's a system.
