Well I posed this same question to Robert last night and he explained to me
it had nothing to do with the grade of Stainless Steel because that only
pertains to weight and thickness of the metal. However, the plausible
explanation was that my knives came in contact with another ferous metal
like my baking pans or something that had caused a rust stain and gotten
into the grain of my knives. The way to rectify it is to one clean the
stain off with a cleaner such as CLR, and also use an SOS pad to scuff the
other metal out of my knives and probably use my knife sharpener to re-grain
them. Thus was probably the same issues with your knives.
