Hey Jason,
I recently painted my engine compartment and pontoons and really liked how it came out. It was a very (VERY) time consuming process to do the job right. You really can't just throw some spray paint on there and expect it to look decent. I've outlined the process and materials I've used on my little website, see below...

As you can see I had the top half of the engine removed, all of the components that are normally bolted to the engine compartment walls removed, the rear fascia, as well as both rear quarter panels.
