Eric-

As far as the door seals, you can find that out by going to either DMC 
Houston (www.delorean.com) or PJ Grady's (www.pjgrady.com) web sites. The 
squeaks, well, I'd say that just about normal for any car almost 20 years 
old. The metal plates you saw on the bottom? One covers the gas tank which 
is nothing more than hard plastic, and there are two on the sides of the 
engine that cover fuel lines and cooling lines I believe.
