I think 2000-2500 is probably more in the normal range. You will likely have to adjust your mixture setting now that you've replaced your oxygen sensor. The reason that the RPMS jump up like that (or at least this is what I think) is because of the cold start valve injecting additional fuel into the engine when you start it. When all of this additional fuel is burned up, the idle falls back down to normal and the idle speed motor takes control.
