Hi Carol, I doubt your A/C has any clog in it. The worst case would be water in your system that may have frozen in your cap tube. But that would be removed when he did a "thorough" pump down of your A/C system. When mechanic performs a thorough pump down he evacuates both the high and low side of the system at the same time. When you say the guage rockets when he went to add freon means he did NOT thoroughly evacuate the system or he has the guage on the wrong port on the compressor. I am assuming he knows to charge the system in the low side port of the compressor. Both ports on the DeLorean compressor look the same. I am a little concerned why your mechanic opted to pump down the system (vacuuming) first rather than just add more freon. I am also assuming he has checked all of the electrical and mechanicals of the system first before opening the freon system and they are all working. Anyway, the chance of a A/C system getting plugged with dirt are about 1/2% and that would be only if somebody had the system open or the filter/dryer unit collapsed and was sucked into the cap tube.
