Actually the lower the number the thinner the oil. "Cleanliness" would
be API rating if anything.

Absolutely correct how multi-viscosities formulated. But think about
implication -- do you really want to put 5 or 10 weight oil in
anything? Maybe if you lived in Nebraska.

Re: stuck oil filters -- leave any brand oil filter on car too long
and this can happen. Or sometimes gasket separates from filter and
stays stuck to block (will leak if you don't remove before new
filter). Yet another reason to change oil timely...

Re: different oil filter housings -- WIX has 3 separate factories in
Gastonia. May be source of 3 different internals, as well as external
differences.
