But what is the opening temperature for the recommended thermostat?

Just the regular DMC thermostat should work perfectly fine. I run my
car daily in triple digit heat, and the stock thermostat keeps things
perfectly cool & normal with a 3-layer radiator. Fans only kick on if
I'm stopped in traffic. Otherwise, the car stays cool.
Stick with that set up too, and you'll do just fine.
