I'm with AON too, they've never asked me for a valuation letter from the club. When I first insured Flopsy back in 2002 with Sharmans, to get an agreed value I had to submit a condition form and 6 photographs, and I got a certificate back saying the agreed value (about £10k at the time). When I renewed with AON again this year, I asked them to increase the agreed value to £14k and they did so without question.
