You have to consider that the extra power does actually go somewhere - ie through the pistons, and held by the liners. They don't like turbos to be set above 6-8psi or you get squashed pistons and cracked liners. With nitrous you might be looking at bent con-rods too!

How would you adjust the fuelling? Nitrous is not a fuel, it's just a way of cramming more oxygen into the cylinders - hence the bit in Fast and Furious with the tanks exploding is nonsense. You need to put more fuel in to compensate.
