There are 4 ways to remove paint. You can sand it off, you can blast it off with different kinds of media and you can chemicaly dissolve it. It can also be burnt off but it is not very practical. The method most often used is paint remover. Just be warned that you may find plastic filler under the paint to repair a damaged panel and you must be very careful not to get the paint remover on the facias or plastic or trim. The "best" way is to remove each panel one at a time and use the paint remover. Don't remove the doors, use plastic to protect everything. It can be done with sandpaper but it will be a long, slow, tedious process. After you remove the paint you will probably have to regrain the whole car.
