In general, a car restored by an amatuer will be worth less than a car restored by a professional shop. It is extremely rare that an individual working out of a garage can do as good as or better than a restoration shop and even rarer than a specialist shop. You can help prove your restoration is good by documenting everything you did, how you did it (what equipment you used, what processes, coatings, etc.) and having pictures of everything before and after. Also, in general, most restored cars are sold for less than what it costs to restore them. If you just want a restored car, you are better off buying some one elses restoration than doing one yourself. If you enjoy working on the car and want to have the experience of doing a restoration - go ahead.
