There were actually two "Coyotes", one from the first season, and one
from the second and third seasons. The original Coyote was a modified
Manta Mirage kit car, with a Volkswagen chassis and a Porsche 914
engine. The second version was a similar body on a Delorean frame.
Don't know whether t used the fiberglas Delorean chassis as well.

Got to disagree with you on the Coyote car from Hardcastle and 
McCormick. Had a look at the website for that car and it is 
definitely not a Delorean, frame maybe? Appears to be some kit car 
from looking at it! Nothing really special from the looks of it!
