Scott Check and make sure that the hot water valve on the right front of the engine is not touching the temp sensor. I've seen it before. When you accelerate the valve will move sligthly and come in contact with the sensor grounding it and causing the gauge to drop down. Since the engine is shaking a little the contact is not perfect and that causes the gauge to drop just a bit. In that case the faster you accelerate the lower the gauge goes.
