You are correct that not everyone has the level of ability that you do so many of the suggestions are at the novice level. On older cars filling the A/C by weight isn't the best way because it can't take into account the aging of the components in the system. I also am certified in A/C and have found the best way is to fill by pressure and output temperature since on the Delorean there is no sightglass. This is especially so if the system isn't empty and you are just topping off.
