It is just that the residue from the polish (usually a petroleum distillate) makes the stainless look darker. Soap and water or window cleaner will return it to its original "shade". Favorite polishes are like noses - everyone has one, but they are all different. Though a tad expensive, I'd currently recommend trying the new SS Gloss from DMC.
