I've done one car that was much worse than my own, but it had been "bodged" in the past. All the others have only been mildly scary! I too have got the proper stud extractors though I only use them as a last resort, and I no longer use the freezer spray - just well placed tapping with a hammer while applying torque. I also make sure to have the manifolds faced when replacing them - the orignal castings were all over the place - small wonder it's such a common problem.
