This would not be 'restoring' old cars.  This is supermodifying the car
which leads to severe lack of support from a lot of the Delorean crowd. 
Judging from personal experience, this will be VERY VERY expensive, and
you will probably never make back what it costs to make the car, much
less a profit.  You're welcome to try if you like, but I don't think
people will be fooled by a 20 year old car with some new parts and then
costing $35-$40k.  Don't forget that fibreglass continues to get
weaker/brittle with age, so as time goes on, we can expect more
break/crackage trouble in the future.  It would probably be cheaper (and
smarter) to start anew, building the car from the bottom up.  The frame
could stand a redesign, especially if you're aiming for 300hp++ and
changing the engine type.  And for God's sake, don't put any PRV back in
there, even if it's 1000 hp.
