Mine does this very same thing. It scares the hell out of me but I know
it's
not overheating because shortly after the needle peaks, it drops down to
normal. All of this despite the fact that I have the self-bleeder
installed.

I have a "Bubbler" on order to check for combustion leaks that could
generate a bubble in the coolant at the thermostat.

If I find that my head gaskets are good, it seems that maybe the
thermostat
is screwy.
